An Indian couple have turned their family-run restaurant into a high-end bakery. Delhi-based couple Mandira Bhalla and Dhruv Lamba have been married for 16 years. Dhruv's family owns the Kwality Restaurant, which was started by his grandfather Peshori Lal Lamba at Connaught Place in 1940. Dhruv, who is the Executive Director of Kwality Group.

Dahi (yoghurt) and Bara (lentil dumplings) are served with a thick potato curry, a startlingly unique combination if we compare it to the northern style dahi bhallas. The baras are served soaked in a thin runny chaas (buttermilk) kind of dahi, tempered with spices. 4-6 pieces are put in a dona and topped with aloo dum.

Preheat the oven to 190°c / gas 5 and line a muffin tin with baking parchment. Roll the dough tightly into a 35cm long cylinder and cut into 8 pieces. Place the buns in the lined tin and leave to rise for 45 minutes. Bake the buns in the oven for 20-25 minutes until dark golden and remove from the tin to a cooling rack.
